Knedliky

Knedliky, or potato dumplings for those of you who don't speak Bohemian, is a wonderful addition to nearly every meal. It goes great with pork, chicken or turkey for example.  And how about leftover dumplings sliced thin and fried in a pan.   A Thanksgiving without knedliky shouldn't be legal (and in many areas in Minnesota, it probably isn't).  This recipe is the easiest I have found, but yet one of the best.  This recipe was taken from the world famous Schloesser Family Cookbook (Family Pot Luck), submitted by Shelly Schloesser.

 

2 cups cold mashed potatoes (I found instant works just fine)
2 cups flour
1 egg
1 Tbls. salt

Add egg to thoroughly beaten potatoes and mix in flour & salt.  Form into 3" balls and drop into boiling water.  Boil 1/2 hour (or when they start to float).  Remove carefully and slice in half.  Serve with a generous amount of gravy.
